Hello, I run Top Tier Catering Texas, and I just got my first "customer" who wants to know how much it will cost to have some meat smoked for them. I'm hoping you can give me some guidance on how to determine a reasonable fee to charge a friend of a friend... What is the product of the cost of the meat, the cost of the wood, the amount of time required, and the beer I consumed?
